Riesling Heiligenstein
The Rieslings from the famous Zöbinger Heiligenstein vineyard almost always display a very distinctive minerality originating from the unique geology consisting of volcanic rock and desert sandstone. The wines from this remarkable site usually need some bottle age to open up. When mature, they show impressive structure and very distinctive aromatics reminiscent of white, often exotic fruit and strong minerality. The ageability of the Heiligenstein Rieslings is legendary.
A great match with grilled meat, goose, duck and game birds as well as richer fish such as salmon, swordfish and catfish, and sushi or sashimi. Stunning with matured white and red cheeses.
Heiligenstein Riesling is whole cluster pressed and then exclusively fermented with natural yeasts without any kind of temperature control. It is matured in large oak casks, resting on the fine lees through April of the year following harvest and bottled in July.

Medium green-yellow. Subtle apricot and vineyard peach with a hint of wild meadow herbs and flinty minerals. Juicy, with sweet yellow peach harmoniously bedded in an elegant structure with finesse. The elegant fruit finish lingers long. Outstanding ageing potential.Vintage 2007

Vintage 2006
Subtle nose of remarkable profundity displaying layer upon aromatic layer with aeration. Reminiscent of candied and jellied yellow fruit, pineapple, vanilla and white blossoms on the nose. Deliciously juicy fruit flavours are balanced by ripe yet racy acid and bedded in a concentrated, compact and powerful athletic build. Very, very long - great class and ageing potential.
