The soil makes the wine – a significant part of the philosophy that we follow in the production of our wines is expressed in this sentence. Even more than the grape variety, it is the soil that determines the ultimate character of the wine. Hirsch wines always show a sense of ‘place’. For this reason we produce wines exclusively from the grapes Grüner Veltliner and Riesling, because there’s a nearly limitless diversity to be had from these two grapes, depending upon the individual vineyard site and the various winemaking techniques.
